Chicken Soba! (and an invisible lunch)

Yesterday was a fine food day. Started out with coffee.

Procrastinated breakfast but then went out to a lovely lunch at Dopo with my co-worker. I had an amazing fried shrimp with little gem lettuce and lemon sandwich. It was indescribably delicious. I so wish I had a picture of it, but I was camera-less and was still without my iPhone. (I have a new one now! Hooray!)

Got home and was inspired to make this chicken soba recipe I had seen in a magazine in a doctor’s office. I felt guilty about the idea of ripping out the page so I took a very blurry pic of the recipe with my phone. Finally got to make it last night. Wow, what a healthy meal. Buckwheat noodles with poached (in water) chicken breast, and broccoli and red pepper. Can hardly beat that. It was super easy and YUMMY too. The sauce had soy sauce, ginger, sesame oil, lime juice, rice wine vinegar. It was good. You boil the broccoli along with the soba noodles, which makes it really easy.

And for dessert! (with one little bite missing, oops)

  1. i love soba noodles. we have some in the fridge right now. yum! oh ya i keep forgetting i want to get an ice cream sandwich.
